This is a response to those who listed their menu on the Monitor Monday thread, don't hesitate to join in for some constructive crictisim and support, that is how we learn.

Billie your day went to hell in a handbasket!:D You were on the road much of the day and had no lunch, did you keep the cravings for something quick and sweet at bay? YES! The day was not banner without lunch but it was what it was. Water intake was good, no exercise and off on the road again today for a meeting out of town.

Breakfast: LC Yogurt smoothie, ham and cheese rolls

Lunch: Meeting, not sure

Dinner: Probably left overs from dinner last night, which would include marinated salmon, Swedish meatballs, some kind of veggie, strawberries

Randy good morning back at you! Yes it is the start of many holiday weekends for people--is this the start of your trip to the cabin or the canoe trip? I didn't think Canadians celebrated 4th of July? :D Your menu is very colorful and interesting, tell me about the protein macaroons? Homemade? More carbs than you normally have but you are really in the maintenance area so enhjoy every bite of them! Gotta love the bokchoy!

Good Morning Billie. The start of a new week, holidays just around the corner, and I'm on plan.

Breakfast: 8 Strawberries, 6 icecubes, a bit of water, Yogurt, Ground Flaxseed, 1.5 scoops of Strawberry Whey Protein. (53 Protein 10 ECC)
Snack: Half a bag of Glenny's Soy Crisps (4.5 Protein 7.5 ECC)
Lunch: 4 Protein Macaroons (32 Protein 10 ECC )
Snack: The other half bag of Soy Chips (4.5 Protein 7.5 ECC)
Dinner: one and a half London Broil with lots of Baby Green Bok Choy and 2 pieces of Cantelope. (78 Protein 12 ECC

LisaS, how did the day go? Tell us about the carne asada, I am not familiar with that. The chicken sounds delicious with the marinara, like a chicken pamesan, yum!
B: protein shake
L: leftover carne asada w/some veggies & cheese - I may add a salad
D: baked chicken in marinara & cheese, a little dreamfields w/marinara, green salad
S: dove chocolate square, some almonds

Alice you know when you think it is a great day it is a real great day, congratulations. I know you have a million things up in the air with work and the move, so this is a great day with all the things that are pulling you in different directions, you are inspiring!

1) 2 scrambled eggs, 2 sausage patties, 1/3 oz cheese in LC tortilla; 2 hot tea's (4 tea bags), 1 splenda
2) 4oz salmon (w/ dill and capers)
3) chef salad consisting of 2c each iceburg and romaine lettuce, bit of red cabbage, 1oz each cheddar and swiss cheese, 2oz each deli ham and turkey, 2 black olives, 1 HB egg, 2T ranch dressing, lime wedge, 1/3c ground turkey/veggie soup
4) 2oz salmon (w/ dill and capers), 1 Slim-Fast LC chocolate RTD shake
5) 3c ground turkey/veggie (canned tomatoes, cabbage, mushrooms, broccoli, bits of red cabbage and carrots - used cole slaw and broccoli slaw packaged veggies), Eden black soybeans in it too
6) 1/2 LC tortilla, 1/2T omega marg, 2/3oz mozarella

As of 10:30 p.m., I have a great day going. Keeping fingers crossed for the next 1-1/2 hours! I'm not sure what the numbers are, but they're better than what I've been doing. This may be too much food overall, but it's all well on plan. Today was a hungry day, my body needs a few days to adjust then hopefully there will be less hunger.

I just got about 60oz water down, so short on that. All supps are down. Only walking during errand running for exercise, however.

Lizi always good to see you! Fresh raspberries are my favorite fruit of all time and at 6:47 AM when I am writing this your menu is making me drool! You ran out of meat, but you did just fine anyway! Good total numbers, you are close to hitting your daily goal and how cool is that! Way to go!

Lowcarbgirl, tell us about the tea going on, is it a herbal tea for a purpose? Your menu looks good, omega sources, fiber, color, veggies, looking good!

Upon awakening 2 oz. Essiac tea
B: 2 hard boiled eggs and a berry yogurt smoothie
S: Sunflower Seeds
L: Sardines and a chef salad
S: Peperoni (nitrate/nitrite free)
D: Mexi Melt Salad (Free Range Ground Turkey, 1/2 cup organic black soy beans, organic cheddar, organic sour cream, organic jalapenos and organic lettuce)

Before bed 2 oz. Essiac tea

Hey everyone really looking good, many different menu's and approaches but all of them are working! I am back on the road today so I will keep you all in mind and know that 5 hours of traveling for a 1 hour meeting doesn't mean I can indulge or miss a meal along the way! Have a good one!

Thanks Billie. Carne Asada is basically a marinated skirt steak cooked on the grill. Skirt steak is similar to flank steak, but it is a really thin cut. The marinade is rather generic fajita/citrus+mexican spicing. Grill, slice very thin, grill up peppers, onions (& we add zucchini for less onions) - and serve in tortillas or as is.
The italian chicken I marinate breasts in italian dressing (or V&O+spices) and then bake. When they are pretty done, I sauce with marinara, cover with shredded italian cheeses and put them back in the oven while I cook the dreamfields.

Billie, thanks for spending the time to do the feedback. Yeah, raspberries are my all time favorite fruit, too. Especially those packaged by Driscoll's! I'm never disappointed.

I never grow tired of all of the wonderful summer fruit...blueberries, strawberries, raspberries, blackberries, etc. YUM!

In fact, I'm hearing voices...I think I hear all of the raspberries in a Driscoll's raspberries container calling my name from the fridge as we speak. :D

The macaroons are large and they were the only thing I had in my fridge at work. They are higher in calories, as are many LC recipes but I used a pound of coconut, a can of coconut milk, and a LC protein batter to hold them together. I will refine it a bit further and post it later but a batch of 30 3" Macaroons work out to 227 cals, 2.13 ECC, 8 Protein/each.
Since I am working at 2000 cals/day to trim a few more pounds off. I can easily maintain, just through this program but these last few pounds are comming off so sloooowly.:angry:

My canoe trip is in September but we have three weeks at various cottages during the summer and teh recent work change that started off as a nightmare is becomming a bit of a new awakening as well.

Canada's official "day" is July 1st (Canada Day), but it has a tendency to spread out when it arrives on a weekend, and we get a stat holiday on the following Monday!!

Our "official" beginning of the holiday season is the May 24th (in that vicinity) weekend - when people go to their cabins or get out their camper trailers/tents and some people even park them for the season at a particular site, and then just visit on the weekends.

Essiac Tea has a very long history. Got its name from the reverse of Caisse (Rene Caisse Canada's cancer nurse). It was used to successfully treat many cancer patients. It is an herb blend. I brew my own (instead of getting it already brewed in a bottle). It detoxifies every cell in the body. It is also full of many vitamin, minerals and nutrients as well.
