Pizza peppers

I bought 4 long banana sized yellow banana peppers at the farmers market. I cut them down the middle like a banana split and cleaned out the seeds. I laid them on a cookie sheet covered with foil. I stuffed them with pizza sausage(gluten free of course). It took about a pound of sausage to fill 8 halves. I baked them at 400 for about half an hour, or until the sausage is thoroughly cooked and browning. I took them off and put them on plates, sprinkled them with a little mozz cheese.

While they were baking, I diced up about 6 to 8 plum tomatoes and sliced about 6 oz of mushrooms. I added some spices..basil garlic salt pepper and a little oregano and simmered them until the mushrooms were done in a small pan on the stove.
I spooned a little of the tomatoes,mushrooms and spices on top of the peppers after they were on the plate and sprinkled them with Parmesan cheese. Everything was hot and the cheese melted on its own. It turned out amazing.

I keep trying to figure out a Paleo style pizza. G'man LOVED this one. We each ate about 3 pepper halves. MMMMM mmmmm.
