Can those who have used them give me their opinions on the different sugar substitutes out there? I'm mainly interested in them for the purpose of baking (desserts).

Stevia is my preference, Laurie - and very small amounts of real sweeteners (under 2 tablespoons). The combination keeps things slightly sweet without oversweetening.
Now Foods Stevia Glycerite. The most concentrated with no aftertaste. It's great in coffee, so it's going to be good for backing. I think 1 tsp equals a cup of sugar... anyway start on the low side because the glycerite is twice as concentrated at the Now Foods Stevia Extract and other non-glycerite processed stevia.
