View Full Version : Coconut flour? Anyone used it?

Hello,

Back at it again. :)
One of the things I've seen looking around for new LC ingredients (and boy are there more options since I started back in 2000!) is coconut flour to use in baking.

Just wondered if anyone here has tried it? Any help with ratios for muffins and such would be great. When I made muffins in the past they were generally with ground flax, almond or pecan flour, and protein powder.

Looking forward to hearing from you guys and being back on board again!

Heather, I haven't used coconut flour, but I just want to say welcome back! :) It's been a while!

Carol, coconut flour was one of the tweaks to your breakfast bar recipe- it was an improvement

Carol, coconut flour was one of the tweaks to your breakfast bar recipe- it was an improvementAh! In addition to the almond meal or instead of it? I backed off a little on the dried coconut because of the extra carbs, I think. I made so many changes it's hard to remember.

I used half and half but I did use more dried coconut - only 1 ecc per tbsp.
I ran out of OOPSIES so didn't use any:lol:
