I'd love to come up with some cold crunchy cereals to use as a convenience food in the mornings much light we used to do with the high carb cereals.
I'm thinking along the lines of some of the almond and flax cookie and cracker recipes, spread very thin and allowed to get totally dry to the point of crispiness, perhaps in a dehydrator.
Another option might be to cook LC muffins or sweat breads and then slice them thin and dry them a la Melba Toast, then break them into smaller pieces.
