Hi, y'all,
Wow, I am starting a thread!

Despite the excutive order, as a float, I will be here at work all day:(

Tonight, I will finish the touches on dinner, homemade cranberry juice, rolls for tomarrow.

Menu:
B-eggs, bacon, hood choc, coffee
L-bacon sandwich on half slice LC bread (thought I was going home early)
S-clementine
S-SB protein bar
D-grilled pork chops, cauliflower, green salad.

Have a wonderful Christmas Eve.

Hi to you, too, Claudette! Merry Christmas Eve, and all that.

Your bacon and eggs looks good. I think I'll do that, too.

What's everybody else up to today? :):) It might be a good time to review your eating options and make sure you have, not only Plan "A", but Plan "B"! If necessary, remind yourself how great it is to experience the holiday without making your body process excess carbohydrates. If you're going to be very busy, prepare dishes that will keep you on-program no matter what those around you consume.

Found my last gift in the nick of time yesterday. Looking outside, I can see ice on windshields. :p Most of the wrapping is done. I won't need to poke my nose outside until it's party time this evening.

Well, we have houseguests (my brother and his family) and Christmas dinner is here tomorrow, so I know that won't be a problem. I'll be stocking some beef jerky and walnuts for the trek to my SIL's for my wife's family dinner tonight. They usually have some protein that isn't too carb-i-fied (turkey and ham, as along as I stay away from the evil glaze ... )

We already know this year will be better than last year's (my wife had her last reconstructive procedure done Tuesday, so that chapter is finally behind us!) Hope everyone has a safe, enjoyable and less stressful Christmas this year!

I will be finishing the stuffing in a few minutes and heading to my brothers place to get the turkey in the oven, drop off my cauliflower/cheese/bacon casserole and some chairs. Dinner won't be a problem and Mom has made a sugar free dessert even! :) I'll have eggs for breaky as usual and probably won't even bother with lunch.

Hi, I've had a busy morning too, made corn bread for the dressing tomorrow and low carb pumpkin cheese cake and lo carb fudge. The last two are new recipes so hope they turn out well. We will see. I love to try new things.

I also managed to exercise for 20 min. and report it so all is well with the Shadow too. I am on a roll !!

Hope everyone has a wonderful Christmas !! It certainly sounds like a lot of us will have a white one for a change. Whew, this weather is something else.

Dear Santa

I don't suppose I was good enough to get that million dollars I keep asking for, so I'll try to get along.

What I want for Christmas is LOVE for all mankind. We need to try a little harder this year to really be nice to everyone we meet.

Throw in some KINDNESS. We need to help each other all year round in the good-feeling spirit we too often only share at Christmas time - that spirit of giving and sharing - of Yule - tide and snow and holiday.

Santa, teach us the HUMILITY to remember all mankind is just the same as we are. Greed and hatred are things we should avoid, above all.

Finally , Santa, give us the ABILITY to change what we can, the UNDERSTANDING to let go what we have no control over, and the WISDOM to know the difference.

Breakfast- 2 whole eggs, 4 whites, 2 Esskay's turkey bacon, 70gms blackberries, 2c green tea.
40gms protein, 8gms carbs.

Lunch- 2 roast beef rollups; 4ozs deli roast beef, 2ozs deli swiss cheese, 2 red leaf lettuce leafs, 1T chipotle mayonnaise, 1 med peach(3-1/2ozs), 2c green tea
42gms protein, 9gms carbs.

Supper- 5oz grilled burger; 1oz cheddar cheese; tomato, onion & basil salad, (1 med(5.2ozs) tomato, 1/4c onion, 1T fresh chopped basil); olive oil & taragon vinegar dressing, 2c green tea
42gms protein, 8gms carbs.

Care to post your recipe? I have made LC pumpkin cheese cake and it was a keeper.

Sure Claudette, I don't have a clue where I got the recipe tho. I am changing the original recipe a bit tho so I understand it is okay to pass it on. I think it turned out pretty good altho it is a tad soft ish.

2 Tbl. cocoa 2 Tbl. Butter 1/2 tsp. vanilla 1/2 Cup heavy cream
4 oz. cream cheese 1 Tbl Splenda 1 tsp. liquid Splenda 1 Tbl. erthritol--you can add packets of Splenda or sweeten to your own taste. I just like a mixture of them.

Over low heat melt butter, then add cream and cream cheese and whisk til smooth.
Add sweeteners and heat till bubbly. Stir Contantly . Add cocoa and vanilla and blend well. Pour into a buttered dish. Place in fridge to set for 3 hours. Cut into 8 pieces. (I made more pieces)

They used 3 T Splenda and their counts were: 132 calories, 14 gr. fat 2 gram protein 2 gram carbo for 1/8 of the recipe.

It has a pretty good flavor--oh yes I also topped some pieces with pecan halves.

Hope you like it , it is certainly easy enough.

My Christmas eve was not bad.
I avoided the various party mixes, I avoided crackers (except the lower carb ones I brought), and I avoided all candies.
Still ate more than usual though.
