Hi all,
I was just reading through the previous postings on lard. After reading "Fat", Jennifer McLagan, a while ago and getting back on the LC wagon, I have been keen to give it a try. My only concern is that when I eat foods high in saturated fat, I tend to break out. But since lard is fairly inexpensive, I want to give it a try for the heck of it. Does anyone use it on a regular basis? Aside from baked goods and eggs, are there particular foods that it's best with?

You can whip it like butter, add herbs, and it's a fine dip for veggies.
One of Dr. Mike's blogs had this on a fancy restaurant menu.

I heard of a person who make lard mayo also...

Wow. That will take some mental adjustment for it to sound good ... maybe I'll think differently once I taste it.

I've got the Fat book open again - she says if you're rendering your own you can do it at 250F in the oven or on vy low on the stove top. She also says to add 1/3 c water per lb of pork fat to keep the fat from burning before it begins to melt. It can take 4-8 hr. Store in frig for 2 mo or in freezer up to a yr.

Very interesting book - most recipes are carby though.
