What do you have when friends are over for a get-together, party or cards? After the veggies and dip what else do you have when they munch away on chips or Cheezies?
How about a tray or bag of these? A very crispy chip.

Tofu/Yuba Chips
These are made from sheets of Bean Curd, (Yuba actually, the skin of steamed Soy Milk). Any large store in an Oriental Market or Chinatown should carry them. I found 2 stores in Ottawa. They are sometimes called Bean Curd Sheets, Yuba or just Bean Curd.
From Web, 1 package = 13.5 ECC 18 Protein/sheet and weighs 5 oz..
A sheet fills two large cookie sheets (http://www.photohosting.info/uploads/fb2d1250e5.jpg) with 8 chips left over in a small pan. I wet the laid out sheet and then season it. I have tried it wet and dry but the seasonings work best when they stick to a wet sheet. Pour off any excess water, score teh sheet to "chip" size and bake. I have tried this with Cinnamon and Davinci Syrup but the ones above are flavored with Seasoned Salt, a touch of Cayenne and some Paprika for color.
I bake these for 15 minutes at 350, or until a few minutes after they start to bubble. I turn the oven off, prop the door open to let any moisture out and test one a few minutes later. They should be VERY crispy, not leathery when cool. If not warm them and turn the oven off and let them sit.
Total carb count for the seaonings and sheet is under 15 ECC.
