View Full Version : Flaxseed Meal Pancakes

These are incredible.
311 kcal, 17.8 protein, 18.4 fat, 3.4 saturated
13.2 grams carbs, 10.7 fiber
2.5 ECC!
They will look just like a pancake!

2 eggs
2 tablespoons ground flaxseed
1 tablespoon almond meal
1 tablespoon psyllium husks
1/8 teaspoon salt
10 drops liquid Glycerite Stevia
1 teaspoon baking powder
dash vanilla
dash cinnamon

Stir until combined, let sit a few minutes to thicken and then add a couple tsps of water to thin out. Pour into oiled (coconut oil) skillet and brown on both sides.

Sounds really good! Would you guess that an extra T of flax meal could substitute for the psyllium?
And powdered stevia for the liquid?

That would work out fine. You could even eliminate the almond meal, just add more flax meal. Try NOW's Stevia Glycerite from iHerb, no aftertaste at all.
I really beat the eggs with a bamix hand blender. Wait a few minutes for the absorption of liquid and then add a little water for the right consistency.
If you put 2 more Tbsp of flax and eliminate the almond and psyllium you will get 10.3 carbs 8.7 fiber or 1.6 ECC.

Thanks again - I'll try them this weekend. I'm getting to the point where I need to look beyond eggs for breakfast.
I do have almond meal so I'll use that but just not the psyllium.

Here's my routine in the AM Monasasha...
I drink a couple of cups of coffee in the AM (with Soy Vanilla because it's low carb and a little skim milk and 4 drops of Glycerite Stevia). Then I will take in a tsp of fish oil, you do not want to take fish oil with a rich fiber meal because it won't get absorbed. Then I have the pancakes and yes, that is a full serving, with a round of canadian bacon. Add a Tbsp of ricotta cheese if you like. Without the ricotta, that's 470 cal. 30 g protein, 28 g carbs, 23 g fat, but only 5.2 g of saturated fats.
Kind of high on the carbs, but you are getting a lot of vitamins so you should still drop the fat pounds. The fiber, 14 grams, is going to take some calories with it.
I'm smelling the baked chicken marinated in balsamic vinegar with spices and need to make a hugh salad. Gotta go! :D

Roadstr - I finally made these and they were delicious. I forgot to add any sweetener (had intended to use a pack of stevia) and they were excellent like that. I used 2 T almond meal, 2 T flax meal and no psyllium. I'll have to plug into fitday to see what the extra almond meal cost in terms of carbs.

Really was a nice change from the eggs I've been having for breakfast every day!

When I make pancakes I put a dollop of whipped cream on top instead of any sf syrup. I also add cinnamon to my pancake mix.

Yeah, these had cinnamon in them -- really tasty. I used some sugar-free syrup I had left in the cabinet.

Leslie - Karole... I use cinnamon a lot, too. I was never the kind of guy to buy ground flax and do this kind of food preparation... Isn't it great.

For you guys that are reading this or those that are less adventurous... not saying you guys are less adventurous... well, try it. Boy, gotta be carefull with my posts these days!

Yes, butter or whipped cream on top with a sprinkle of a little more cinnamon. Don't forget ricotta cheese can be a good low carb option, too: 1/4 cup has 4 g carbs and 5 g protein. It's a protein bargain and lasts a long time in the frig.

Karole... for me, a 1/2 cup of heavy cream, whipped with 10 drops o stevia glycerite is a topping on top of these pancakes that would not need any syrup.
