This salad is what we consider a 'mouth cleaning' salad. It is sort of the 'sorbet' you would get in a French restaurant between courses. It is not real LC because it has carrots and a granny Smith in it...but I'm posting it just the same because it is ok if you're in the final laps of weight loss.
Celery root peeled, washed and julienned really fine
3 Carrots peeled, washed and julienned really fine
1 Granny Smith Apple, washed and cut diced small
Almond slices about a handful
All you have to do is toss all the stuff together with lemon juice, olive oil, salt, pepper and let it sit for a while. It too gains in flavour if made in advance.
This particular salad can also be made with mayo. If I do it with mayo I usually add lots of cubed roasted chicken breast, making it a one dish lunch or dinner.
