View Full Version : GRILLED EGGPLANT rolls with Feta

One of my favorite hot antipasti is grilled eggplant filled with something.

In this case I'm using FETA in which I will put minced garlic & some pesto.
I calculate about 3 slices of eggplant per person.
FETA usually buy about a pound.
Garlic to taste
Pesto just to add a little color and flavour


The feta must be worked with a spoon until really soft. I prefer using my hands but I know that some people prefer not. When the cheese is soft I just add the garlic and pesto. DO NOT ADD salt to feta cus it is already salty. A couple grinds of good pepper is super though.

At this point you only have to make the little rolls which you will then place in a parchment lined baking pan. They must be put really close together so that they don't open. I usually put the overlapped part of roll on the top so that when folks take their portion the cheese doesn't flop in the pan. They go into a preheated 300° oven for about 15 minutes. They only need to heat-up.

Serve warm.
