Hi
I am a bit confused as to which oils are "good fats".
Is there a list you could direct me too.
I see that canola oil is in pretty well every prepared salad dressing at my grocery store. I think that is considered a "bad" fat. Even the ones that proudly say that they have olive oil are mostly canola with a splash of olive oil.
I think I will just make my own but I do need the list of which oils are the "good".

Pretty much any cold pressed, organic and extra virgin oil which is handled correctly (in dark bottles, for instance) is a good start.
Extra virgin olive oil, straight, is tough to mess up.
Organic cold-pressed sesame oil (clean or toasted) is in my cupboard, along with extra virgin unrefined coconut oil (solid at room temp), butter, and tiny tiny vials of organic cold pressed walnut and pumpkin seed oil. The walnut and pumpkin seed oils and toasted sesame oils are mainly for flavoring, so purchased in the smallest quantities I can possibly find and stored in the 'fridge.
My kitchen is unheated, so I don't store my EVOO in the fridge, unless we're full in a summer heat wave, but I do store it in a dark cupboard or dark bottle, away from light and heat.
Same for the coconut oil.
The butter is usually in the fridge in the summer, and the stick being used is on the counter in the winter.

And pork fat in any form is a good thing. ;)
