Hi
I'm fairly new to this site and 21 days into the PP intervention. I hasve bought a large container of dry curd cottage cheese and wouldlike to have more ideas of quick uses for it. The dry curd has more protein and less carbs per volume than creamed cottage cheese and I like this. If you have any ideas please share with me.

Hi, Glendak...welcome in!
You can use dry curd cottage cheese nearly anywhere you'd use regular cottage cheese, although depending on what you're making, you might need a bit of half and half to help moisten the mixture.
You can use dry curd or farmer's cheese in cheesecakes (sweet and savory), quiches, cheese and cream sauces, pastries/pancakes/muffins, and nearly any kind of shake recipe. Here's a sample of recipes in these forums that use cottage or ricotta cheese, and would adapt easily to a dry curd cheese substitution:

Other sources are Greek, Ukrainian and Russian cookbooks--traditional recipes use a lot of dry curd cottage cheese, and many are naturally low carb. I have a Polish community cookbook from the fifties and a Russian cookbook that both have at least two dozen recipes from appetizers to main dishes to desserts that use dry curd cottage cheese.

I used to love dry curd cottage cheese.
It is not distributed in Newfoundland.
