I could have sworn that I found the Almond Pudding recipe in this Forum but I can't find it! Will someone please help?

Ammy says she has almond pudding for breakfast. I did the search and no recipe was found.

The one I recall called for almond flour/meal, water, sugar substitute as the base with either frozen or fresh berries or other additives. Everything microwaved.

How much almond meal? How much water? How long to microwave?

I'm sorry, I've never had Almond pudding???

It sounds GOOD though!!! I hope you find the recipe and share it!

I have had almond scones and almond biscotti...??

I'm not sure this will help, but I use the pulp from making almond milk to make a kind of cereal/ pudding. Just put sweetener and cream in the pulp and microwave a minute for hot or eat cold.

If I were to make something like that from almond meal, I'd use an equal amount of meal and water and microwave until boiling, cover and let stand. If it's too thin, add more meal and recook. Then I'd serve it as above.

I found it!

1/3 cup almond meal
2 TBS water
1 egg
artificial sweetener to taste.
Microwave 45 seconds to one minute. Depending upon desired consistency.

To increase the protein count, add another egg
To increase flavoring add frozen berries or unsweetened coconut or nut butters.

I did find this recipe on this discussion forum but could not find it again using the search feature. So apologies to the person who first posted it.

"Almond meal" is ground up almonds; ground very fine, almost like a flour. You can get it at some health food stores, and places like Trader Joe's (they have it the cheapest I've found).

yep! I just buy unprocessed almonds and make my own meal in the magic bullet. Much less expensive.
