Stevia Conversions

1 t. stevia = 4.16 cups sugar (200/48)
1/2t. stevia = 2 cups sugar (96 teaspoons)
1/4t. stevia = 1 cup sugar (48 teaspoons)
1/8t. stevia = 1/2 cup sugar (24 teaspoons)
1/16t. stevia = 1/4 cup sugar (12 teaspoons)
1/32t. stevia = 1/8 cup sugar (6 teaspoons)

And this is the "recipe" I follow to make it:
Mix 1oz NOW Brand Stevia Extract (Potent White Herbal Extract) Powder in 2/3 cup of water (5.33floz) for a concentration of liquid stevia equivalent to that of liquid Splenda...1/4t = 1 cup of sugar.

Sorry I cannot give credit for this, but I collected it somewhere in my meanderings through the Internet.

Low Carbohydrate Sweetened Condensed Milk

2 1/2 cups heavy whipping cream
6 egg yolks
1 cup Splenda
2 Tbsp DiabetiSweet (optional)

Whisk all ingredients (added in the order given) in a saucepan over low heat, stirring constantly until thickened. Cool completely, add to sealable non-metal container and refrigerate. Use within 7-10 days.

This mixture is useful in any recipe where you'd ordinarily use sweetened condensed milk (like Eagle Brand.) Using the Diabetisweet adds less than 1 carb per serving but aids in proper consistency, however, it will still be delicious without it. Depending on your plans to use it, adding a bit of vanilla after cooking can be a nice touch.

Makes approx 1 1/2 pints. 40 carbs in entire recipe; 4 grams per 1/4 cup serving.

Sweetened Condensed Milk (2)

3 cups unsweetened soymilk
1/2 cup erythtitol or equivalent
Vanilla, to taste
pinch salt

Combine soymilk and sweetener in saucepan and cook over medium-low heat until reduced to 1 cup. Stir in vanilla and salt. Cool in refrigerator. You can add stevia or liquid sweetener to boost the sweetness, if desired.

Vanilla Extract
Ingredients
(1 servings)
2 c Vodka
5 Vanilla beans; cut in 1" pcs

Instructions
Combine vodka and vanilla beans in a jar with a tight-fitting lid. Cover the jar and let it stand 6 to 8 weeks. (The vodka mixture will turn amber colored after a day or two.) After half the vanilla extract is used, add more vodka to cover the beans. The flavor in the beans is gone when the vodka no longer turns to a dark color. Yield: 2 cups.
