Here's a nice spread to use some of that zucchini that's so plentiful right now.

Zucchini Spread

1 8 oz. package cream cheese
2 T. mayonnaise
a squeeze of lemon juice
1/4 t. Beau Monde seasoning
1/2 c. unpeeled, grated zucchini (or cucumber)

Mix all ingredients, cover and refrigerate for at least 3 hours.

Entire recipe contains about 1000 calories, 9.4 carbs (.4 fiber), 100 g fat, 18 g protein. Serve on Dierdra's Wry Crisp flax-meal cracker and you've got a tasty ~2-carb snack.

That spread sound great! I've got so much zucchini my neighbors are locking their screen doors so they don't magically get a bag with 2 or 3 of them !

Seriously though, I need to get rid of some of them. I can only vacuum pack and freeze so much! I'd rather have a freezer full of meat then zucchini.:D:D:D

I have decided we're growing zucchini next year. Our Cukes are doing well, and I love them, but the beets are just not really getting eaten, so I'm not growing them again. They're the only veggie we're growing that is not EXTREMELY low carb.

I learned that lesson. I ended up tilling under almost my entire beet patch last year ... I ate some greens, a few beets ... but the rest of the family wouldn't touch them ... so if I want beets ... I buy them. I've found that I can grow peppers (I have so really hot jabaneros and jalepenos), tomatos, zucchini and some eggplant ... that about is plent of "green thumbing" it for me.:thumbsup:

GF asked me to pickle them, so I did and after sitting in the juices for two days, they're VERY VERY yummy!!!

Oops, I wasn't suppose to eat any...but I snip a bit or two daily.

I've made a Paula Dean zucchini casserole that's pretty good but I'm the only one who will eat it. It's basically cooked zuke, then you squeeze all the liquid out of it, mix with sour cream and shredded cheese, and then bake for 30 minutes.

I LOVE beets! My latest find was a beet salad with goat cheese and pistachios; it's wonderful. Beets are the in thing at trendy restaurants.

We've made similar casseroles too. Luckily our whole family eats it we use yellow squash with it too. I'll have to dig up the recipe
