Thank-you Mitra for adding this section. I hope we all find it a little easier to find these much needed helps all in one spot. Now, I hope we seen some contributions that are both yummy and easy to make.

PROTEIN POWDER "PUDDING"

Although I've eaten low carb before, I'm new to Protein Power with it's empasis on protein. I was having difficulty at some meals meeting my minimum protein requrement. So I got some protein powder. Fortunately the one I got doesn't taste bad at all, though it's a bit thin and watery mixed just with water. I tried adding a bit of cream, which was good, but could jump my calories more than I wanted. I also put it in coffee or herb tea, which worked well. Then yesterday morning I had an idea, and it looks like it could become one of my favorites:

1/2 scoop protein powder (provides 13g protein, 1g carb)
1/4 cup whole milk ricotta cheese

Mix together well, and add a tablespoon or so of water to desired consistency.

I suspect we'll come up with all kinds of flavor variations. My only one so far (I did come up with this only yesterday) was to use 1 T of lemon juice in place of the water. Very good.

Without additional flavorings this has about 151 calories, 4g of carbs, 20 grams of protein. Not a meal replacement, but definitely helps to boost my protein intake.

Cheese Crisps

I imagine this "recipe" is listed elsewhere, but it bears repeating.

Take 1 slice American cheese, cut 3x3 (9 pieces), and place 1' apart on parchment paper. Microwave 45 sec - 1 minute depending on microwave. Cheese will spread, puff, get brown speckles, and when taken out will harden to a nice crispy texture. Some brands of cheese hold up for dips, but others are more fragile. Sprinkle with seasonings before nuking if desired.

Crispy crackers

1 Josephs Lavish Bread (found at Walmart or Netrition)
olive oil
seasoning salt

Brush cracker with seasoning salt (or other seasonings to taste)
Place on baking sheet and score into squares -- I usually do 6 x 6.
Bake 375 for 5-6 minutes. Watch carefully toward end as it will brown fast. I sometimes remove from oven when edges are brown and break off the outer strips and return to oven for further baking.

Stores well in airtight container or zip lock baggie.

Entire recipe: 6 ECC (0.2 ECC per cracker if making 36)
