SAVORY CHEESE BREAD PUDDING -- 13g protein, 8g ECC

Amount Measure Ingredient -- Preparation Method

2 tablespoons butter
1/2 cup onion -- chopped
1/2 teaspoon salt
1/2 teaspoon pepper
3 eggs
3/4 cup half and half
2 teaspoons dry mustard
pinch dried thyme
4 slices Arnold Carb Counting Bread -- (6g ECC/slice)
4 ounces Belgioioso(r) Four Cheese Shred -- shredded=1 cup

Melt the butter and saute the onions about 10 minutes over medium heat,
until the onions are golden.

Beat together the eggs, half and half, the spices and the salt and pepper.

Cube the bread slices; you'll have just under 4 cups of bread cubes. Layer
half in the bottom of a buttered 8x3in. loaf pan. Top the bread layer with
half the sauteed onions, then with about one third of the shredded cheese.
Repeat the layers, but don't add the final cheese layer yet.

Pour the egg and half-n-half mixture over the bread mixture, making sure
that all of the bread pieces are soaked in the custard. Add more
half-n-half if necessary to cover. Top with the remaining third of the
shredded cheese.

Lightly cover the loaf pan with a tent of foil and bake 30 minutes in a
moderate oven (350 degrees.) After 30 minutes, remove the foil cover and
bake until the top is golden brown. Serve warm or cold.

Recipe can be doubled or tripled. The bread doesn't need to be stale.
Lower carb bread or higher carb cheese will change the net carbs per
serving information. If you can't get Arnold Carb Counting Bread, any
reduced calorie/diet (40 calories per slice) bread will work. Most 'diet'
breads will only add 1 carb per slice to the recipe; Beefsteak Light
(diet) Rye would be very good here. Belgioioso(r) Four Cheese Shred is a
combination of Asiago, Fontina, Parmesan and Provolone; if you can't get
that, any of those cheeses, shredded, will work. You could also try a
swiss or a cheddar. REcipe can also be made in a crockpot; follow the layering
directions and cook on high for 4 hours.

Yield: "1 loaf"

Per Serving : 275 Calories; 20g Fat (64.7% calories from fat); 13g Protein;
11g Carbohydrate; 3g Dietary Fiber; 138mg Cholesterol; 490mg Sodium.

1 tablespoon orange juice, frozen concentrate
3 eggs
3/4 cup half and half
1 teaspoon ground cinnamon
1/4 teaspoon ground clove
5 slices Arnold Carb Counting Bread -- (6g ECC/slice)
1 cup farmer's cheese -- crumbled (8 oz.)
10 tablespoons whey protein powder (EAS) -- vanilla

Melt the butter and orange juice concentrate, and saute the cranberries
until they plump. Remove from heat and set aside.

Custard: Beat together the eggs, half-n-half, protein powder and spices.
Use a whisk to get all of the protein powder incorporated into the
custard.

Cube the bread slices; you'll have just under 4c. cubed bread. Layer half
in the bottom of a buttered 8x8in pan or buttered 2-3qt crockpot. Top with
half the cranberry mixture and half the shredded farmer's cheese. Repeat
the layers.

Pour the custard mixture over the bread mixture, making sure all of the
bread cubes are covered with the liquid. Add more half-n-half to cover if
necessary.

OVEN DIRECTIONS: Cover the pan loosely with foil and bake in a moderate
(350 degree) oven for about 30 min. Remove the foil cover and finish
baking--the loaf will rise and the top will be a golden brown.

CROCKPOT DIRECTIONS: Due to the slowness of cooking, no 'standing' time is
necessary. Bake in the crock on low for three hours, or until risen and
golden around the edges, and set in the center. Allow to cool slightly.
Run a knife around the outside edge and unmold onto a serving plate. Cut
into wedges and serve.

Recipe can be doubled or tripled. The bread doesn't need to be stale. If
you have the carbs to spare, serve with a warm vanilla or orange sauce.

SUBSTITUTIONS:Any low carb or reduced calorie/diet (40 calories per slice)
bread will work. Most 'diet' breads will only add 1 carb per slice to the
recipe. Ricotta or non-creamed small curd cottage cheese can be
substituted for the farmer's cheese. Soy, almond or coconut milks
(unsweetened) can replace the half-n-half.

Yield: "1 loaf"

Per Serving : 186 Calories; 13g Fat (49.9% calories from fat); 19g Protein;
9g Carbohydrate; 2g Dietary Fiber; 105mg Cholesterol; 139mg Sodium.

Excuse me for my little knowledge as i am just starting out (im on 6WC) week 4!. I am preparing myself for when i finish, please can someone tell me what 'half and half' is? please....

Half and Half Cream is a mixture of cream and whole milk and contains 10 - 18% butterfat. Mainly used in beverages and does not whip (http://www.joyofbaking.com/other/glossaryQ-Z.html#Whip).

In the UK, I would use 3 parts Single Cream, one part water. That should yield something about 15% fat, which puts you right in the wheelhouse of half and half.

FWIW: I wouldn't do LC bread pudding if it were the last sweet thing on earth. I love bread pudding, with a passion, and that makes it one of those things I don't want to have around the house in more than single serves... danger Will Robinson, danger.

Thankyou! and dont you worry i will not be making bread pudding- I cant stand it! YUK! i was just wondering what half and half was as it is used quite alot in these forums.
No red alert danger signs for me haha. I must admit though im actually craving for something SWEET and i usally ALWAYS refuse a dessert but right now i could eat eerrmmm apple pie with a whole jug of cream. I dont know why????
What sort of puddings do you eat? (if any)

As I understand, pudding in the Queen's English means quite a different thing than pudding over here.
I haven't been eating a lot of pudding since on low carb. Jello makes these dark chocolate, sugar free puddings, but it's still 7g of carb if you don't count the sugar alcohol at all (If you count as half, as I do, it's 10.5g, not appropriate). But wife gets them and I will split a cup with her (cut with whipped cream, nicely low carb).

AAhhh i see, im not a fan of 'puddings' but just sometimes my sweet tooth comes shining through just when i least expect it, so i am preparing myself for when it does.. the jello sounds nice especially with the cream. I will give it a try, thanks for the info!
