HI;

I've been making these for a while, even before I started doing low carb. I added fruit when I was not doing low carb. I find these a nice treat, and something to help fill that desire for ice cream that hits late at night.

I just made this up, I didn't read about it or copy it from anyone.

It has almost no carbs, and mainly fat from the cream. The amount of fat will vary depending how much cream you use.

Take a good blended (like a oster of kitchen aid that can crush ice) and fill it up about half way with ice.
Add desired amount of cream (I do about 8 to 12 ounces)
Add some vanilla extract (.5 carbs per teaspoon)
Add A combination of Splenda and Stevia to taste
I sometimes Add some Davinci coffe syrup (sugar free made with splenda) as well for mor flavor.

Blend very well, you may have to polk at the ice with a fork or something to get the blender going. You may want to add a bit of water to make it blend easier.

A large glass made with this recipe would be mainly fat from the cream, and maybe 1 carb from the vanilla depending on how much you used.

I also sprinkly in cinnamon and or nutmeg at times. I have added in raw eggs as well. I know that some people will disagree with this pratice, but I have never gotten sick from it. A large egg adds about 1 carb and 7 grams of protein to the shake. I get my eggs from a very high quality source that I personally inspect, I am not sure I would not to reguarlly eat raw eggs from the grocery.

You could also aded a whey powder for protein if you perfer instead of the eggs. Or just skip the protein and eat this as a desert with almost only fat in it.

*Stevia a sweet herb that is carb free and is available from large grocery stores and health food stores. It is kind of expensive, but it helps the flavor (it is a little minty) and a little goes a long way. They talk about stevia in the PP book.
