View Full Version : Looking for LowCarb Coleslaw Salad Recipe

I love coleslaw salad very much. Does anybody know a coleslaw salad recipe that is Low Carb. I have thought about mayo and splenda as the dressing and as a substitute for regular coleslaw dressing which is forbiden :-) Thanks for your help. Any ideas are great appreciate it.

Also, how many carbs does cabbage have?

I use:
1 dollop canola mayo
1-2 dollop sour cream
a drop of sweetzfree (or sub 1 pack splenda)
small splash white wine vinegar
little squeeze of lemon if I have any on hand
dash or two of mustard powder
many many shakes of celery seed

taste & correct as needed.

for cabbage:
1/2C shredded has 1.88 carbs of which 0.8 is fiber

We have started purchasing Broccoli Slaw instead of the cabbage slaw. We buy a lower carb coleslaw dressing (can't remember what brand at the moment) and put on very little (if you toss and set in the fridge overnight it's "sticks" better)...then we throw in almonds and soy nuts.
GF likes to add craisins, but they're a bit high in ECC for me.

Makes a good slaw..

Here is a dressing I make for coleslaw all the time. My family loves it. And it is very low carb

1/2 cup mayonnaise
1 1/2 Tbl. vinegar
1 1/2 tsp. mustard
1/2 pkg. Splenda

I also use it as a dip for veggies and my grandson who spent 2 weeks with us last summer liked it so well he had me copy the recipe for him to take to his mom.

our favorite coleslaw has become one I invented by tweaking a recipe posted on Mary Dan's blog:

1 pkg angel hair coleslaw shred ( without the red cabbage and carrots as the mix goes unpleasantly pink if you add them)
2/3 cup splenda or equivalent ( i use 17 drops of sweetzfree)
1/4 cup white vinegar
2 tsp or to taste of prepared horseradish
salt and pepper to taste
mix it all together and you are done!

we just LOVE this stuff.
