wow everybody must be sleeping in today! lucky folks! :D
nothing exciting going on just work ( ain't retail grand)
already had "first breakfast" :
hot tea with cream and a "carrot" cake muffin ( tastes like carrot cake but made with zucchini--and chopped pecans. yum)
elevenses will be something with eggs.
dinner ( packed ) is up in the air as I don't have anything prepared but I can't buy it out. since Ive been testing BG I've really noticed that everytime I get a prepared meal out--even something that looks totally on-plan--the BG goes up --to a normal sort of spike but then it doesn't come down to normal in the right amount of time. which is what happens when I eat high glycemic carbs-- so these prepared meals ( we're talking chicken ceasar ,no croutons here) must have some hidden sugars in them. ( in the dressing?)
so--only home prepared stuff for me!
Carol--interesting about your spike after the potato. I'm gonna have to test that and see, as well. A potato skin has always been one of my favorite treats. I may have been doing myself in ! It is becoming very clear that I don't handle the "white stuff" well at all--as per above.
if I stick to truly low carb meals ( example: eggs bacon and a few cherry tomatoes) i get barely a blip on the meter. But, even a little sugar or wheat: i.e. less than 10 grams, and the levels go up normally --not super high--but then don't come down for HOURS. like for the rest of the day!:eek:
I guess that would BE the definition of insulin resistance!

I don't have much.
I am a man. With a plan.
I am applying for jobs today. Doing laundry today. Sorting iTunes today (how many times have I done this now? Why is this an area where I cannot be satisfied?). Filing my first travel voucher for all the money that's on my credit report but the government's debt today. Maybe watching some football today. Definitely eating my bistecca alla fiorentina (http://italianfood.about.com/od/beefbracioleetc/r/blr0568.htm) today. I have a supplier. It works in my budget. If life is ever getting you down, there is always bistecca. Perhaps for an occaision, I will get American Chianina steaks to do it with at home, but for this place and time, regular American cow flesh will do.
How are you showing up today? What's the plan?

Hello, Relief :). I'm just thinking about cooking dinner. We're having very traditional roast beef tonight - but without the potatoes and Yorkshire pudding. Something green and leafy instead, I think. And a glass of red wine.
The blood testing results look as if they're teaching you a lot - even if the answers aren't always the ones you want to hear ;).

IIRC the Dr. Atkins New Diet revolution used to have an LC recipe for Yorkshire pudding. I think it was a soy flour thing, but my copy is back in DC. If you had a hankering, I think it can be done.

The normal Yorkshire pudding recipe can be tweaked by using more egg and less flour (the Eliza Acton version is pretty much at that end of the spectrum), so I don't think I'd bother with soy flour. I think we'll leave it for now, but when my husband gets closer to his goal, it will definitely feature sometimes.

I've made a decent tasting Yorkshire pudding using half blanched almond flour, and the other half part oat flour and part regular wheat. Came out pretty good. Wouldn't go near the soy--blech!

I'd think the almond flour would work very well in clafoutis. Especially a cherry clafoutis. Maybe next time we have visitors...

Actually, I just uploaded a couple recipes that I was going through and had tweaked the first time I saw them on a Giada diLaurentis show; the viniagrette is my basic recipe that I 'herb up' depending on what's in the garden, and the salad is very good (but I'm not quite up to crispy green food just yet...) I have to get through the Kitchen forums and make sure all the recipes are indexed...haven't done that since just before Thanksgiving. Once a quarter...
Nigella Lawson was making spicy scrambled eggs and veggie frittatas this morning, and they looked terrific. I guess I need to get to a market and pick up some fresh things.
I was able to eat when I got up today...so far:
cinnamon mocha protein shake (37g protein, 8g ECC)
a cheese scramble with an oz. or so of swiss, two eggs, and 1/4 cup of fresh shredded potato (18g protein, 12g ECC)
I think I'll probably have two smaller meals later today, since eating more than a little at a time seems to make the nausea/washed out feeling worse...and still not sure how I'll digest stuff. So probably some more shredded chicken in broth, and maybe a little baked ricotta or custard later. Doing another quiet day to save up for the week ahead, but I do have to run out to the store and give both Casey and Madison baths now, before it gets cold again.

We slept in this morning as well, sure sign for me that I am still having the effects of the cold/flu. Made low carb french toast, with LC bread, half n half, eggs, cinnamon, vanilla, nutmeg, obviously lacking in protein I will be needing to make up all day but gosh it tasted good for a change.
I have a HUGE task ahead I definitely will be needing all your help with, at least mental and emotional support. I am gathering the forces in the state and well we are walking across the state of Illinois for PR/fundrasining for Children's Advocacy Centers. Just shoot me now!! :eek: It is set for May 16-May 19th starting on the capitol building steps in Springfield and walking to Chicago. Do you suppose I better really concentrate on my exercise? Oh man wait until Shadow hears this!
Anyway more to come, as I said I will need alot of support, already have hit some roadblocks so getting good and spinning and running some more!

Good morning,
I got up at 6am today (I am not much for sleepin in) and tweaked a few repices to make them LC.
Here is my food so far
B- hard boiled egg, cottage cheese and raspberries, coffee half and half
L- chef salad
D pork tenderloin with bacon and cheddar cheese, stir fry bok choy and cauliflower, sf jello with reddi whip
snack if needed cheddar cheese and almonds

Wow, you folks have been busy today !! Sunday usually is so quiet, I was not expecting to see all the posting.
I am currently rereading my protein power book-- I have my PPLP loaned out so all I have is the older version, but I have been noting specifically any mention having to do with bp. So far, I have read that if you are at all sensitive to the AA in eggs yolks and red meat it can keep the insulin and cholesterol levels higher. This can affect bp.
So I know my cholesterol has risen and bp is under control (but only with more medication than I like). I may need to test the egg and red meat by eliminating it for 3 weeks or so. If I get any reduction I'll know what it is going to take to better my health. Egg Beaters or egg whites only, and no beef unless it is soaked per instructions given in the book.
I hope this is my problem as I have truly been disappointed that my bp has not been reduced. After losing 40 some pounds I would have thought I would be on less meds than I was last year at this time , not more.
It is so ignorant of me not to have picked up on this section about AA and bp before as I have read both PP and PPLP-- so where was my mind when I read this info before? I guess I am looking at it from a different perspective now--earlier I thought weight loss would take care of it and didn't hone in on the AA. Now I am reading it with the intention of helping my bp and there it was.
How many other things regarding health have I missed -- Hmm I may have to reread it all again and again.
Had a nice leisurely morning, watched the CBS morning show, ate some cottage cheese and no carb crackers, read the paper. Then GF had to get up and finish packing for her work trip. She will be gone til Thursday. I know this is not a big deal, but she doesn't go away very often, so I'm excited (about having the place and time to myself) but nervous (because I want to EAT when she is not here).
I may be on here a lOT.
I have very full days on Mon and Tues, but Wednesday is open, so if I were to "lose it", it would be tonight or Wed.
I can DO this...
Today, my plan is to work out at least 30 min. I may find a Barnes and Noble, use my gift card and find a new Pilates dvd, or I'll walk.
10am 1/4c cottage cheese, 2no carb crackers, 15 almonds
11:30am lc lasagna
3pm great big steak!!! Romaine lettuce or celery
6:30pm 4c popcorn (rest of popcorn from movie yesterday)

I may add an iced latte (add 6ecc) or some cheese with the popcorn.

Made a fritatta with egg, onion, jamon serrano, and parm. Was pretty damn good. In future, I'd add some heavy cream to the eggs, but otherwise, very nice. 5 eggs to the dish, I ate half of the pan, with half for tomorrow.

Just got back from the grocery store.
Bought all the ingredients for Meatza...even found a no-sugar-added pizza sauce.
That I will make and enjoy during the week.
But for tonight...I bought a porterhouse. One of my favorites, and something I consider a treat as I'm a cheap-skate!:razz:
I figured that normally I'd blow that on goodies and bread-stuff while my GF was gone, so why not get something I will REALLY enjoy and something that won't hurt me??!

I'll eat in about 1 hour so I can grill in the light...I'm very excited about it...silly, but I am.

Hello everyone! Happy Sunday. I am staying in today. Nice and lazy Sunday. I'm doing laundry -- not my favorite chore. My DD did Pilates with me this morning.
I'm trying to switch the family to healthier foods. They are just munching their way through the day. I tried to warn them that if they eat all the food today there won't be snacks for after school. But they can't seem to get enough of the good stuff. Maybe we are turning a corner here.:p

Deborah, I think that I didn't take enough of the potato away from the skin. I felt just a little self-conscious (like I do pulling the topping off a pizza) so I may not have done a thorough job. I didn't realize it was such an exact science, either, but the glucometer doesn't lie. The spike dropped from 174 to 120 the second hour, but it was startling. I woke up to 89 this morning. Somehow, checking the numbers must make me more careful. :o :rolleyes:

Like, a few others, I am having a "I'm tired to the same thing for breakfast issue". Those muffins sound great.
I liked the idea of cottage cheese w/ fruit in the am. Will try that, also.

Had a Sunday School party lunch today, I took crockpot chicken n' veggies. Thankfully, there were other PP friendly dishes there.
Exercise: 32 min walk w/ dh, body flex + toning/areobic tape, callenetics abds/ butt tape.

Menu for today:
B .5 cup Sp. K cereal, 4 oz hood milk, 1 serving egg beater, bacon,coffee,cr.
L tea , almonds,cottage cheese w/ jello and strawberries, 1.5 oz cheese
S almonds, Lindt sq., lc chocolate shake
D meat loaf, .25 cup baked sweet potato w/butter, .5 cup cauliflowerw/cheese, tea, jello w/strawberries and whipped cr.
Protein 110 Ecc 39
My day is over.
I ended with a piece of Meatza and a glass of milk...now I'm VERY full.
I did find an "italian sauce" that has 4ecc per serving...that's pretty good.
I divided my meatza into 5 pieces, and they are 2ecc per piece. It's a LOT of protein in one meal...but it's SOoooooo good.
No exercise today. I finished painting the edging in the bathroom, I sanded the doors on a cupboard (used a dremel, so no upper body workout), and laid the molding on the tub. The only thing left is to hammer the edging down and put the bathroom door on.
I will be so excited to be DONE with this bathroom project, but satisfied because I did it myself. Everything but using the miter saw on the edging I did myself!!

Good news -
dinner last night was good.
driving home, the city as seen from the Verrazano Bridge was incredible. The sky was clear, the lights were brilliant. The skyline is amazing in the day, but on a clear night, it's one of the most beautiful man-made
things you can see.
slept til 9, woke with no headache
watched a movie, went walking with dh, very fast pace
Bad news - got headache back & didn't follow my eating plan as well as I planned
Off to bed. We're supposed to get snow tonight, so tomorrow will be a very hectic day, indeed

I know how home projects are. My DH starts some projects and then gets called off on some other tragedy that's more important and then has a hard time getting back to finish. I have a bathroom sink and faucet that needs installed and that has been sitting around for about 2 months without being touched. Luckily, we have another bathroom upstairs that we can use. But, it gets old looking at a sink without the faucets attached :frown::(:cry: !!!!
It will happen soon, I just won't hold my breathe waiting.
I wish I would have the guts to do it, but it would probably be wrong, look bad, and DH throw a tantrum, so, I'll wait.
Let us know when you get it done!

What a weird day! Started out by sleeping late so went to the last Mass of the day. Grandson's day to overnight with us and he has developed ear infections, so DS and I gave him his medicines under protest. He's in bed now and I sure hope he sleeps the night without coughing. Ah, well!
Breakfast - protein mango shake
Lunch - beef & cheddar rollups
Dinner - a cup of pasta sauce with meat, 5ecc chocolate

It's almost tomorrow, but I wanted to check in. Sounds like everyone's been busy today. Me too, but I found some time for a nap this afternoon between church this morning and two choir practices and church tonight.
I felt like I ate a lot today, but the counts are fine, so maybe I'm being oversensitive.
Breakfast-- 7 beef/sausage breakfast meatballs
Lunch--chicken florentine (about a cup and a half)
Snack--a bit of the beef/Dreamfields pasta casserole I made for later in the week (about a half cup)
Supper--provolone/salami wrap (2 slices provolone, one slice salami)
Snack--SF ice cream bar
Busy day tomorrow--leaving right after school for a b-ball game, won't get home until 10:30 or so.

I wish I could fix/replace our sink. It started dripping recently, so I got all the tools and crawled under to start to remove the faucet so I could replace the washer (easy fix-a dripping sink) and discovered :jawDrop: that it's all hard piped and frozen shut. :mad: I can't even turn off the water...
So, that will have to be done by a plumber, but I HATE that the sink drips...what a waste of water!!
But I did the floor, the edging, painted the borders, and sanded the edges of cupboards...that all felt really good. A light touchup can REALLY improve a bathroom!!
