Jump in everyone, give some comments on menu ideas, what we need to do or should have done, be supportive!

Breakfast: LC cereal with raspberries, iced latte,

Lunch: grapes, cheese, turkey, not sure what else I can scrounge around for!

Dinner: Salmon with red peppers, small baby shrimp in a pepper jelly sauce (about 1 teaspoon), refried beans....Hey I know it is very strange!!:D

Holy cow that is one weird dinner! We were experimenting with some wontons and trying to see what we could do, the filling was delicious! Little low on veggies--What can I say?:confused:

Breakfast: Dark Chocolate Whey Protein Shake with Strawberries/Yogurt/Davinci & Xanthum Gum. I comes out thick like a Harvey's Shake

Snack: 2 pieces homemade flax protein bread with PB.

Lunch: A bowl of beef chilli with Black Soy beans, onions, garlic, etc. 1 chicken breast

Snack: -

Dinner: Can of sardines, 1 slice protein bread, 4 squares LC chocolate with butter/Xylitol/Malitol syrup over crushed peanuts and coconut. It did not set but was like a soft sweet toffee.

I don't know Randy but sardines and chocolate are about as weird as my dinner--okay not quite. But glad you are having fun and enjoyinmg different things. This is about the first time I have ever seen you low on veggies though! Hmmm those days off to experiement!

Carol a little nutty today are we? Probably only want to eat nuts one ounce a day, but sometimes those nuts are life savers snacks for me! Love that lunch you had, it sounds yummy!

B: 1/2 hamburger w/cheese on Sara Lee whole wheat bread (about 12 ECC total in the bread)

S: about 3 oz. good aged cheddar

L: 2 hot dogs (>1 ECC each)...I know this is a pitiful lunch...I may add a salad from the school cafeteria

S: almonds on the way home

Okay dad, not getting this, 1/2 hamburger--what did you do steal it off one of the kids plates? Alot of bread for breakfast with only 1/2 hamburger. And dinner was?

2x2 inch piece of chicken. very painful and stuck in my throat even though I chewed it forever

Yogurt later after the ibuprofen maybe takes some of the pain away form trying to eat dinner.

Waht time do you work out in the AM? And what was for dinner?

Late Snack: String cheese, 1/2 apple

Ah that menu looks great! Nice variety. You might want to put some PB on that chocolate for a little protein with the snack, yum!

L fast food at Wendy's today but I did okay--bunless cheesburger with tomato, pickles and mayo, small salad I got the chili and put some of the juice and meat from that plus the chipotle ranch dressing and a little sour cream--pretty tasty! club soda with splenda.
1 ounce SF dark chocolate

D cold turkey and roast beef and salami various roll ups with pickles and tomatoes, a little mustard, some cream cheese;some cheddar; about 8 "Mary's gone crackers" brand of high fiber no gluten crackers: 1 ECC each
small scoop LC chocolate Ice cream 2 LC "not-sugar" cookies

You showed us how to eat on the run! Nice variety

Hi, y'all, here's my day.
B: atkins canned shake, strawberries
L: tossed green salad w/ carbwell's dressing, grilled steak, grilled zuccini/winter squash w/ few onions, LC dark chocolate pudding
S: two Dr. Kracker(mini- crackers) w/ slice munster cheese
D: Hebrew National hot dogs w/ mustard, sprinkle of cheese, lettuce/tomato salad, Italian dressing, LC tapicoa pudding

Lots of color, veggies, fruit, nice variety and some chocolate--hey looking perfect too me!

Nice going everyone, your menu's are really inspirational, I hope those that don't post take notes from many of you!

Thanks Billie. Unfortunately I didn't get back on the Internet last evening, so didn't update. I ended up having 6 Triscuits and cheese in the afternoon instead of the jerky and egg, so ended up a bit over 40 ECC. I've got to break my Triscuit habit -- my substitute for potato chips. But at least I stopped at 6 whereas with potato chips it would have been the whole bag.

On Monday's I get to the Y between 7 and 8 am so that I can be showered, dressed and at work by noon.

Dinner was a cup of Texas chili, a small steak, and a tossed salad, all with a glass of red wine.

That should have read "1/2 POUND hamburger"...sleep deprivation, ya know?

Dinner started out innocently enough...2 baked chicken thighs and green beans...then some corn chips...then homemade bread pudding....argh. At least it was made with lower carb whole wheat bread ;-(

Yes, it is because I had the day off that my meals were short on veggies and made a few different choices. I definitely work at getting more than 5 servings a day. A serving is only a half cup and it is easier to be closer to my protein target without going way over if I have some form of salad or veggie with a meal. Strawberries are back on sale and it is amazing what a taste treat you get for a few ECC.
The sardines are a quick EMERGENCY food if I do not want to make something and canned oysters are the same but with a few ECC. COstco has 6 cans for $5.49 and you develop a taste for them.:rolleyes:

I just can't get past sardines. Gabe loves them but I really gag at the sight of them! hmm maybe I will get a grown up palette one day soon, but until then the chocolate sounded yummy :-)

Well, I didn't edit in some wine that I had after rehearsal.... while I organized my bead stash (inspired by Mary).

BC, have you tried making homemade crackers? There's a recipe in the Dana Carpender book that I love; the only ingredients are sunflower seeds, parmesan cheese, sesame seeds and a little water to bind the dough together. You roll it out thin on parchment paper and bake them. It may sound fussy, but it's worth it. They are YUMMY.

I'be been experimenting with sardines; I don't like the kind that are real grainy from the bones. I did find one kind I liked but I forgot what it was; Reese, maybe? I have to be careful when I have them because they're so smelly.

http://www.mediterrasian.com/graphics/recipe%20pics/sardine_toast.jpg I don't usually have them mashed like this on toast but it does look nice. You could try the crackers or a on some LC flatbread or in a small salad. The heads are off so they are not looking at you when you eat them.:p

I like them cooked with a little onion (or shallot), tomato, and oregano. If they're fresh ones, then just grilled and sprinkled with lemon juice is wonderful. (Tinned ones are more in the "ok if there's nothing else around" category.)

Hey! I resemble that remark!

I s'pose you're right. They're the easiest thing to keep at work for a snack and I had them for breakfast, too. I stuck to my plan all day, though, and didn't slip except that too many blueberries escaped the bag and fell into my yogurt. I ended up with 1/2 to 2/3 cup and savored every last one.

I'm ALWAYS sleep deprived even when the baby DOESN'T keep me up! I could sleep 10 hours a night, every night, and still not get enough. I literally fall asleep in my chair nearly every night while doing our Bible reading with the kids...and I'm the one that's reading...out loud! I'll just drift off in the middle of a sentence and eventually one of the boys will remind me that I've fallen asleep again.

No for sure. I rarely like sweet with fish or meat.

The chocolate/malitol syrup and butter thing was meant as a small sweet afterwards. You put butter in a sauce pan throw some malitol and chocalate squares in and let it come to a full boil. Have a tray of unsweetened, long coconut strands and crucsed peanuts or almonds and just pour this overtop. It was less gassy than I had expected and was almost the texture of unset toffee. A real treat every once in a while when you want to remember teh old days.;)

I've made homemade crackers in the past, but not from this recipe. I have the book and will give it the try. My main problem is I love the Rosemary/Olive Oil Triscuits. I haven't found anything I like better. I've decided not to buy any more until I'm in transition and can handle 20 ECC at a meal.

How exciting for them Aaron. Maybe you should walk around as you read to keep yourself awake and generate a little more enthusiasim for your subject. My husband used to read to the kids in such a boring way that it put us all to sleep. Our daughter begged to be able to be the reader and read with such animation that it brought it alive to everyone. In high school speech, she came in second in the state of Indiana.

Billie.. Wantons... We shape them into muffin tins and bake them for 8 minutes at 350*. Till lightly browned and slightly crispy. You can do this ahead and store them in a container where they will not get broken. Then we make a filling with 2 pounds italian sausage browned crumbled and cooled. We drain and chop one can of black olives,2 cups shredded cheese,one cup of ranch dressing. That is mixed and refridgerated until ready to serve them. At serving time, put ten wonton shells on a glass plate, fill each with the mixture, A heaping tablespoon of filling in each one. Put the dish in the microwave for one minute. Take it out and serve. You will not be able to keep up with them. My kids request them for every family function. I even had to make them ahead and bring them to my sons wedding. They are awesome as take alot horsdevours.

Hawk, I do when the story is exciting...but when you are going through the lineages...blah. I sometimes just paraphrase parts of that. The boys love the battle stories...they also enjoyed the book of Ruth, which was Monday night's reading. We watched the ABC production of the 10 Commandments the past 2 nights...it was cool to watch them say, "Hey! That's not the way the Bible says it happened!"

Aaron, I think that taking the time to read outloud to your kids is the most awesome thing you can do. Esspecially when it is reading them the bible. Cory Ten Boom and her family read outloud twice a day and she had most of the bible in her brain and it got her through all those dark days in the concentration camp. I read that book( The hiding place) out loud to my family because I thought they would never take the time and they were not readers at the time. When I would quit , they were so dissapointed and begged for the next chapter. They were 9 and 12 at the time. It was awesome how interested they were. My husband was doing projects around the house and he would stop and sit down to listen.
