View Full Version : Ricotta Pizza Crust - Can it be done?

Hello yall

In honor of trying new recipes, I am trying to make a "crust" out of ricotta. I understand it exists but do not have a recipe (nor could I find one). Does anyone have the recipe? (It could be here and I have not seen it) I am looking for a simple crust I can throw pepperoni and cheese on top of (that my husband will eat).

Feelix, if you bake ricotta, it changes the consistency and you might get a pizza crust you like...if you spread it thin enough in the pie plate, it's definitely structurally sound enough that you can slice it and eat it out of hand. Try these recipes for 'savory' Baked Ricotta, spread real thin:

You might also try searching on 'pizza crust.' I know that Karen Barnaby makes one out of shredded cheeses and cream cheese that is REALLY good, and it's in the Pizza thread in the forum.

Sarah, I have only made this recipe with cream cheese but know others who have made it with ricotta and said it was very good. It may be what you are looking for.

Can cottage cheese be used as well as ricotta for these recipes?

Wendy, I know that for the baked ricotta, you need ricotta cheese. Ricotta cheese is 'recooked' and therefore a lot of the whey and moisture is out of it; cottage cheese has more moisture so wouldn't dry out as much in the baking process. Great for a cheesecake, not so good for a pizza crust. Also, cottage cheese curd is usually coarser, even the small curd versions, than ricotta, which tends to be creamier.

Thanks. I read all your links and found many of them pretty interesting. Cottage cheese is my breakfast staple, so if I can find new ways to prepare it (or its cousin ricotta) that's probably something I will enjoy.

Okay, so I could give all of you huge hugs!

I am allergic to flour and yeast and I haven't had pizza in over a year. This looks amazing and doable - followed Kevinpa's links!
