View Full Version : Sweet eggs
This is what my wife and I have a few time a week for breakfast. In a blender combine 12 egg whites, 1 teaspoon of vanilla extract, 1 table spoon of your prefferred sweetner (I like brown sugar) yeah some carbs there but not too many. Pour into a non stick pan then cover and cook on low until it becomes firm and starts to puff up. This is similar to an omlette. We serve it up with strawberries and a light low carb syrup. The eggs are almost custard like. Good protein!:)

o you have to blend to some specific beaten egg white consistancy? Is there a cooking science reason to use only the whites and not the yolks - are you going for souffle-like texture?

Several years ago, before I met my wife, my GF at the time used to make something she called sweet eggs, which was basically scrambled eggs with splenda. Not my favorite, but she seemed to dig it.
While I mentioned it, I'm learning that scrambled eggs can be very complicated or very simple. And that complexity isn't necessarily a waste of time on this.

Swedish pancakes are a very eggy (very little flour) crepe-like pancake served with berries or syrup. French toast done right is very eggy yet also sweet - I could see something along this line being good as well.

Whip them in the blender on med with the vanilla and sweetner for about 15 seconds or so.
We are going to try this recipe tomorrow with adding peanut butter.
Let you know how it turns out!
OK, add 2 tablespoons of peanut butter to this recipe when whipping in the blender. I also switched to splenda on the sweetener. I am big peanut butter fan and this really adds a new twist for someone eating alot of eggs.
