Ok..1st off..I want to try and make something that anyone would make with what you have..You pick the spices though. It could be Italian, or Mexican, or Sweedish,German,French...whatever...

You could combine them all in one dish or make two different dishes
Just make a dinner menu and cook it and tell us what you came up with.No amounts are here..You choose.

Chicken
tomato
cheese...monterey jack,or white cheese
spinach
lettuce
mushrooms
olive oil
olives..black or green or both
peppers...any kind

I'm not sure if that is enough ingredients to start off with. I was just looking through my stuff and picked out what was visable.

Let us know what you come up with! Let's share our Ideas.

well...what's the rules...can you use "other" stuff as long as you use ONE ingredient off the "list".

I looked at that list and thought - just throw it all together and make a salad!

I'd pull the chicken off the bone, pound it flat, stuff it with mushrooms and the cheese and roll it up into little bundles. Then I'd braise them in a pan sauce of tomatoes, olives and vermouth or red wine, and serve them on a bed of wilted spinach. ;)

I love one-dish meals, so I'd cube or slice the chicken and brown it in olive oil, add the peppers (and onions or garlic), mushrooms and let them get almost done, then the black olives. Probably shred the cheese and let it melt on top. The lettuce and spinach would probably be a salad, although I could see the spinach wilted in the chicken dish.

I'd shred the lettuce,spinach and dice the tomato,black olives and mushrooms then set them aside . Next add cumin,chili powder and cayenne to the oil and some banana peppers and brown them and add the chicken and simmer till done.Then I would melt the cheese on the chicken and serve it over the salad or next to the salad.

Does anyone else have some stuff in the kitchen that they want to put up here for a creative culinary challenge?

Galean, I'm making those rolled chicken things you put up here!

No rules..Just add whatever you have on hand.. If you have a bunch of stuff in the kitchen and are thinking...HMMM I wonder what I could make with this...Put it up here and we'll take a wack at it.

I had another idea..

Cut up the chicken in 2 inch chunks, put them in a bowl with the whole raw mushrooms, cut up peppers in large chuncks, cherry or grape tomatoes, drizzle olive oil over all and add seasoning..italian spices or whatever and cover to marinade it for a couple hours in the fridge,
Make a salad out of the lettuce spinach black olives and cheese.
Make kabobs out of the marinaded chicken mixture with skewers and grill them.

I'd cook the chicken with the mushrooms and tomatoes (would you let me add onion, garlic, oregano?). I'd chargrill the peppers then peel them and marinade in olive oil & serve them with the olives as a starter. The lettuce & spinach would be made into a salad, dressed with the olive oil (and a bit of lemon juice if it's allowed, or vinegar) with the cheese shaved over the top using a potato peeler.

Here's an idea, no idea if it will work.

Chicken Breasts, boneless skinless
Tomatoes, juiced
Olive Oil
basil, shredded
rosemary, oregano, salt, pepper

take the non-chicken ingredients, beat together into a marinade. Marinade chicken for several hours in the fridge. Tomatoes should provide the acid that you would usually get from a citrus juice or a vinegar in a marinade.

My other thought:
I'm going chicken, small cubes
Tomatoes, small cubes
Olive Oil
prosciutto, chopped
mushrooms, sliced
basil, minced
oregano
Parm
Black Pepper
Salt
oh, I forgot, an appropriate amount of Dreamfields corkscrews.
Boil up pasta, drain
couple T of olive oil to sauce pan
saute chicken, brown,
then prosciutto, crisped
then mushrooms
then tomatoes
then seasoning
then pasta (stir into sauce off heat)
then plate and parm it up.
Very nice.

I just put the basics in If you have other things in your cabinets that you consider staples..use them.

When I shop I buy meat and salad and veggies. I never plan meals ahead and then shop. After I get home I wonder ...what can I do with this? It all depends on my mood, or if I want Italian,spanish,german, whatever.

I think lots of us have the right foods in our cabinets but figuring out what to make with them gets hard and we keep getting bored with what we make over and over.

So please...anyone....look in your cupboard and fridge and come up with another challenge. We all have different ideas.

I have not tried dreamfields. I'm going to look for it and use it. I saw on another post you wrote that it did not raise your blood sugar. Prosciutto.?..not familiar with it.

Prosciutto is an air cured ham from Italy. You can get it at Costco or Trader Joes or Wholefoods. I think Dierbergs had it when I lived in St. Louis. I dunno if they are in Chicagoland or Indiana.

If you have sensitivity to wheat, Dreamfields is not a good idea. But it's usually about $2.50 a box, and they ALWAYS have a $1.00 coupon on the website, so it's not terribly expensive to experiment.

I saw those ingredients and I thought of my fav Mex food - fajitas:D

Grill the chicken, tomatoes, olives, green and red bell peppers (and an onion), with a drizzle of olive oil and (if dh is not eating) some Sazon, otherwise just some salt.
(I have a griddle for my stove, so that helps, otherwise I'd sautee it).
Shred the monterey jack and serve it on the side
I never liked those things you wrap fajitas in, so no problem me skipping them.

Raw spinach salad, too.
