For various reasons I'm interested in making up chicken salad, tuna salad and similar recipes ahead and freezing portions so I can just grab them when needed. Does anyone know if this effects the taste/consistency of the food or do I need to leave out certain ingredients to do it safely?

lol...I never make enough that it would MAKE IT to the freezer! YUM! lol :D Probably depends on what you put INTO your chicken salad? Some people put in nuts, or celery...which I don't think that would hold up very well, but? if it were just chicken...I would say, why not?!

I wouldn't freeze either fresh raw veggies or mayo/creamy salad dressing if you use either of those things in your salads...the raw veggies will lose texture, and to me frozen and thawed mayo is just yucky. It's okay to freeze raw veggies if you'll be cooking them when you thaw stuff--just not if you're expecting crunchy bits of celery and carrot in your salad. ;)
