MUSHROOM-ONION-SAUSAGE STUFFING -- 10g protein, 3g ECC

Serving Size : 12 Preparation Time : 20 min., plus baking time

Amount Measure Ingredient -- Preparation Method

1 1/2 cup onions -- thinly sliced
3 tablespoons olive oil
4 cups fresh mushrooms -- coarse chopped*
salt & pepper to taste
1/2 cup chicken broth -- or white wine
2 tablespoons butter
2 pounds sausage links -- casings removed*
2 teaspoons poultry seasoning -- or sage

Sauté the onions in the olive oil over medium heat until caramelized,
about 1/2 hour. Turn heat to medium high, add the mushrooms, sauté for
about 15 minutes. Season mushroom/onions with salt & pepper.

Turn heat to high, add the broth, cook for a couple of minutes. Lower the
heat & simmer for 10 minutes.

Stir in the butter, a tbsp. at a time until combined. Remove from heat &
set aside.

In a large fry pan, sauté the sausage meat until browned, about 5-7
minutes. Add the mushroom/onion mixture & the poultry seasoning, combine thoroughly. *Note: Ava uses sweet turkey sausage.

Use this stuffing to fill a turkey or large chicken or bake in a casserole
separately.
