View Full Version : Light and refreshing treats?

Sometimes in the afternoon I crave something lighter and refreshing (like an orange or some pineapple), especially if my office is warm, but avoid it on LC. A piece of cheese might quell hunger, but it's not really a refreshing (or sometimes even satisfying) treat! Does anyone have any LC suggestions for something lighter and maybe a little sweet or juicy?? I can always go to a liquid, but I'm looking for something with more substance than a soda or crystal light.

Thanks!

How about a tomato or a chunk of cucumber? I haven't done it recently, but as a child I used to raid the fridge and cut 2" chunks of cucumber to munch.

I choose pickles sometimes...crunchy, FULL of flavor, and VERY low carb like the cukes.

I actually have about 1/8th to 1/3rd of an orange, tangerine or grapefruit...whatever size will provide a 5-7g ECC serving. Cherry tomatoes and grapes, in appropriate serving sizes, work well too.

Donut/saturn peaches are about in the 5-7g ecc range (if I recall correctly).

Strawberries, black berries, blue berries, raspberries.

Star Fruit.

cup of cubes is 9g - 4g fiber - 5g sugar. Mild, but can be juicy and refreshing. Fun to look at too.

sugar free jello. If you want to avoid the aspartame in the little premade packs--make your own. use unsweetened gelatin and koolaid plus splenda, or part koolaid and part real juice or add some berries too. a serving in the afternoon with a splash of heavy cream can be a very nice treat!

Relief reminded me of this when she said jello.

This is a little richer, but really hits the spot for me -- use 1/4 cup sour cream and sweeten it to taste. Stir in some vanilla -- don't omit! The vanilla is essential! Add 1/4 to 1/2 cup berries, depending on how many carbs you can afford. I get the big bags of frozen mixed berries at Costco. The combination of the berries and the tangy sour cream is just wonderful! I've also seen recipes for a berry gratin of sour cream and berries that I'm thinking would be fun to try sometime.

Cold iceberg lettuce. It's really yummy. High in potassium too - I know iceberg is like the uncool cousin of darker greens but it's rarely bitter (unlike the others) and it's fun to eat in wedges. Plain! Or maybe with a slice of avocado.

FUNNY!! I just had that EXACT treat...plain iceburg lettuce wedge.
I had a cheese stick with it. I needed something before I ran off to the gym!

Therefore, I agree with LaughingW!!
