I found the brownie recipe, ordered the ingredients I did not have, and now I can't find that recipe anywhere!!! Where is it? Help. I cannot get that picture out of my mind and must have that yummy looking recipe to see if it delivers. So Kevin? Anyone? take care, Moe:confused:

Thank you thank you thank you. What a site he has made. I actually don't know how to do that or I'd be posting my recipes like that. I guess they would have been lost even if I hadn't pulled my posts in the shuffle when the site crashed, so I guess I shouldn't feel so bad. I really thought I would be able to finish that cook book. Now there are new ingredients but maybe everyone can't get them so I'll end up reposting some day. Hopefullly those who really liked my recipes hard copied them. I hesitate to even post the vegetarian ones because I am only a vegetarian by force because of my worry of ending up like my siblings all sick and hurting all the time. So I kick and complain and carry on. Tomorrows diet exploration will be mock vegan frankencheese. Wish me luck.

Gang, I'm not sure Kevin ever posted his brownies here...this is the link to the Cookies thread: http://www.proteinpower.com/forum/showthread.php?t=56 and they're not in it. Or maybe he posted it and took it down. In any case, it's not indexed...maybe it's in a collection of recipes thread somewhere, but it didn't come up when I searched for all of his posts.

Well, it's the same Kevin, but I don't know to which recipe moe refers... I've never heard anything but good about his recipes, so it may be worth your time to explore! ;)

I tried these yesterday and didn't have great results. They were very dry and crumby and not that sweet (I don't have the sweetzfree and tried to sub). The sweetness wasn't the issue, the texture was (they were the chewy brownie recipe). Any suggestions?
I also tried the chewy pecan cookie and got flat crisps instead of nice chewy cookies. I did not use any subs in this one. Again, any suggestion?

Assuming you used all of the other ingredients in the amounts listed I can only guess that our oven temperatures vary and you need to adjust the baking time down. That amount of polyD baking at 275 degrees should definitly be chewy. When I bought a new oven about a year ago I had to adjust some baking times because my new oven held oven temps way better than my old one thus keeping a more consistant temprature and reducing the baking time.
The first time I make a new recipe I always keep a watchful eye for different baking times.

Because you seem to have the same results with 2 of my recipes I really think the baking time is the issue. I never post a recipe until I have successfully made it 3 times in a row. I can honestly say these never turned out dry for me.
I've never baked with these types of ingredients, so I just didn't know where to start. I'll try again and keep my eye on them for less time as my first experiment. You know, I did check the brownies and thought after 30 minutes that they might be done, but I wasn't sure how to tell if they were done or not.
I ate the pecan crisps, and I can tell the cookies would be yummy. I'm also eating the brownies, because the taste is still good. I'm assuming some whipped up cream might be nice on them!
I'll try and let you know how the experimentation goes - may be a little while before I have time to try them again!

I've never baked with these types of ingredients, so I just didn't know where to start.
Other things besides oven temp and baking time which can affect texture are your pans (glass vs. non-stick aluminum vs. tinned steel vs. baking stone) and your altitude above/below sea level. Get a thermometer in your oven to be sure it's truly at the temp you set the dial at, and you may want to use a silpat pan liner or baker's parchment in your pans if you have lighterweight metal or dark pans vs. glass or a baking stone...just a thought. Sea level should be the same between your location and Kevin's but it's also worth a guess, too.

Following up on what gaelen has suggested. I always use a nonstick foil lined 8 x 8 pyrex dish when making brownies and an air insulated aluminum cookie sheet lightly sprayed with crisco spray for the cookies.

AT22, I believe I may have found the problem with the pecan cookies.
Without a long winded explanation of how it happen, I think I accidently copied the recipe down wrong. :redface:
If you sub baking soda for the baking powder I believe you will find the chewy back in the cookie.
