View Full Version : ECC in 'Protein Power Diet Soup'?

I found this recipe for Mary Dan's Protein Power Diet Soup in a women's magazine quite some time ago and wanted to try it. Sorry, I cut the recipe out to save it and didn't keep the magazine so don't know which one it was.
The recipe as written says 6 ECC per serving (1/6th of recipe) but when I plug the ingredients into FitDay, it comes out to 8.91 ECC.

The ingredients are:

3 tbsp Olive Oil
3 cloves garlic
1 1/2 onions
3 cups each zucchini and yellow squash, sliced, or 3 cups frozen mixed veggies
3 cups diced cooked chicken or 3 (5-oz. each) cans chicken, drained
2 x 14.5 oz cans diced tomatoes
3 x 14.5 oz cans seasoned chicken broth
6 cups fresh baby spinach or 3 cups frozen chopped spinach, thawed and squeezed dry.

Am I missing something? :confused:

Nope, Bev-Ann, you've figured the ECC about right. If you check in the Soups #1 (http://www.proteinpower.com/forum/showthread.php?t=74) thread, where the recipe is posted, I've got the same ECC rounded up because I don't count ECC in decimal points. ;)

I think some of the issue is that certain varieties of diced tomatoes in cans and certain types of canned seasoned broth have different counts. For instance, a cup of Pacific organic low sodium chicken broth is 1g ECC, while other brands can be as high as 5g ECC. So with this as with all other recipes, use the nutrient info listed as a guide, but make sure to check your own labels. Trust, but verify. ;)

I agree that it's got to be the tomatoes. Every brand of canned whole and diced tomatoes I have available to me says 5g ECC per 1/2 cup regardless of counts for other macronutrients. FitDay agrees with this and there's just no way 1/2 cup of tomatoes could have substantially less than that. The funny thing is that if you choose '2 x can' for the quantity in FitDay, the ECC comes out to only 5g for the tomatoes (compared to 28g when measured by the cup) and the per serving ECC then equals what the recipe says. However, it doesn't say what size the can is. I was thinking maybe that's what happened when the recipe was being published. ;)
Having said all that, I find this soup so filling that I can't finish a serving. So I add another 2 cups of broth (for a total of 8 cups) and increase the chicken to 4 cups, then divide the entire recipe into 9 servings (ECC goes down to 6.69g per serving). I also use eggplant instead of zuccini. I just find it holds up better in soups. :)
