Since I love cukes I very much disagree with the quote :D but something to think about today is what is your favorite way to prepare protein?

Silly question but I think we get into a rut and we need more options. This weekend we grilled, we "crock-potted", baked, and prepared food on top of the stove. There are so many ways to prepare lets say ground beef beside than just the old hamburger pattie? What are some of your favorite ways to prepare protein?

Tongiht we are having meatloaf, but we make it with tomatoes, olives, some red wine, mushrooms and sometimes sauteed zucchini...What are something you do?

It would be fun to hear what your favorite way to prepare protein might be, I hope we get lots of good hints!

I just got a new pressure cooker at the state fair. One you can use for pressure frying and dry roasting too. :D . LOVE it!! 5 min/pound for chicken, so did 5# of chicken parts in 25 minutes. Also cheap meats turn out tender without hours of cooking. Not that I have any problem with the slow cooker - just like to be a little less organized :rolleyes:

Good morning. I thought I'd never get back in. I tried to reply earlier and the system said I was not logged in, and of course, I couldn't remember my original password. :confused: I had to have a new password issued after a number of tries. Ugh! Anyone else had that problem?

Anyway, I had a great weekend at the football game-we won after 2 overtimes. Yay! :D

I like to poach chicken strips. It doesn't take long and you can use them so many different ways-in a salad, or casserole, or just as is. Bring water to a boil with chopped onion, celery, salt & pepper and any other seasonings you like, then add the chicken and bring to a simmer til they're tender. As an added bonus, you can strain and freeze the chicken stock to use with soups or flavoring in other dishes. It's cheaper than buying the packaged cooked strips too. :)

Oh, yum! It's a good thing I've got my lunch with me!

My fave is crock-potted cubed beef. I make either soup or stew and the family likes it just the way it is. I think the secret is seasoned diced tomatoes as a base to which I add any lc vegetable that happens to cross my path. I usually go Italian or Mexican with the seasonings.

Chicken pieces slowly cooked in broth in a covered pan. Breakfast meatloaf/meatballs that has evolved a bit from the recipe on this board. Thick boneless pork chops baked slowly with this marvelous cajun seasoning I found. Round steak baked under those diced tomatoes. Fish baked with lemon pepper and butter. Grilled anything, even the beef cubes.

Billie, do you mix those ingredients right in with the raw ground meat and bake the whole thing? I'm really interested!

Billie, check out my Hot Chicken Salad. Posted on reciepies Everyone loves it. I tend to make my meat like I would if it were in one of my old dishes. I slice sausage and cook it with tomatoes and spices for pizza and top it with mozzerella just before serving. OR I layer it with cottage cheese and Mozzerella like lazagna with out the noodles.
My mother pounds out sirlion to tenderized it and tops it with tomatoes,onion,celery and makes some kind of swiss steak. If you simmer it in a deep frying pan on low for a long time, you can cut it with a fork.
I also brown and simmer porkchops and make a homemade mushroom soup to simmer them in that turns in to a tasty sauce as it cooks and thickens.
Stirfry with lo carb vegetables. Fajitas on a salad instead of in a shell or in a lo carb shell.
I ate out this weekend twice, I stuck to lo carb but there must have been chemicals in the food. I have had a headache all day yesterday and did not sleep last night because of it. Today I am drinking plenty of water and eating things very plain. This morning was actually a grilled outside beef patty. I still have the headache. I may end up fasting to get rid of it.
