Hi everyone,
I need help with a recipe. I was trying to alter a recipe for spice cake. I feel pretty comfortable changing the flours and the sugar, but what do I do with the milk? I was going to change it to cream -but should I change the quantity - do half and then maybe add enough water to equal the full amount?

1/2 water and 1/2 cream would probably work, or even a combination of sugar-free syrup and a portion of the cream (reduce sweetener in that case).

Depending on the amount, you might even be able to substitute it with:

- all water
- water and yogurt
- soy milk, unsweetened

Obviously, what you use will determine the carb count. There are websites (Nutritiondata is a good one for working out recipes), and fitday is not bad, if you're not putting in your whole menu for that day (or just choose a day you haven't used and put the ingredients in there)

I've done exactly that lots of times - half cream, half water or half DaVinci SF syrup (and then reduce other sweeteners) and it's been great.

I'd love to see your recipe if it turns out the way you like!

Thanks for the confirmation on the cream issue. My birthday is a month away, and that will be my birthday cake..... I'll be sure and pass it on if it works!
