What parts of the animal should people eat more of that they don't and for what reason? Hearts? Livers? Bones? Eyes? Brains? Tongues? If you have multiple answers, please put them in a list from most to least important in your opinion.

not in any order:
we did have a longish discussion on beluga whale eyes as a great source of Vit E (I think it was Vit E) - but domestic animal eye - too close to nervous tissue for my taste (see brains).
Tongue and Heart are muscle meat for all practical purposes.
Small animal livers - probably good if organic good source. Larger animals - I'd be careful of the source - but I don't like liver anyway. Maybe once in a few months, or in very small amounts.
Kidneys - probably occasional use if from good source. Maybe once in a few months if then.
Bones - always good for soup and let the minerals come out in the broth. I guess marrow is good to eat (but again, not a fan here)
Eggs - as in fish eggs as well as poultry.
Brains - I'm not sure I'd eat any commercially raised brain and many of the wild animals (elk, deer) have enceph issues as well. Me - I'd stay away from nervous tissue - though brain is fat and nutrient rich. Fish brain not sure it is very available. Not much walrus or whale brain avail outside the Inuit/Alaskan native areas I don't think.Same with blubber, seal fat :D
thymus, white tripe - not sure of their nutritional values. I know green tripe is good for dogs if you can get it (and stand the stench).
